Ingredients:
1 medium onion, chopped
10 cloves of garlic, crushed or chopped
2 jalapeños, chopped
Zest and juice from 1 lemon
1/2 cup fresh grated ginger root
1/2 cup fresh grated horseradish root
1 tablespoon turmeric powder
1/4 teaspoon cayenne powder
2 tablespoons dried rosemary leaves
3 cups raw unfiltered apple cider vinegar
1/4 cup raw honey (or more to taste)
Instructions:
Combine all the ingredients except the honey in a large glass jar.
Pour the apple cider vinegar over the ingredients until they are fully covered.
Cover the jar with a piece of parchment paper under the lid to prevent the vinegar from touching the metal, or use a plastic lid.
Shake well and store in a cool, dark place for 4 weeks, remembering to shake the jar daily.
After 4 weeks, strain out the pulp using cheesecloth and pour the liquid into a clean jar.
